Pici with Breadcrumbs

To empty the pantry … This is Granma’s recipe “don’t throw anything away”!

Ingredients:
(serves 2)
For pici:
200 grams of flour “00”
Water
For the sauce:
stale bread
1 clove of garlic
a sprig of fresh rosemary
extra-virgin olive oil
salt as needed
pepper

Method:
Pici:
Add water to the flour to obtain a dough similar to pizza’s: elastic and dry. Take a pinch of dough and “spiciatelo”(work it to obtain a “snake”) with your hands palm to palm. You have to get 5/6 cm long noodles, and squat. (It’s harder to say than to be done!). Put them to rest on a dry flat area (a cutting board is perfect), dusted with flour. When the water boils, put in the pici. They take about ten minutes (it’s fresh pasta but it’s fairly thick!). Once cooked, sauté them in a pan with the sauce.
Sauce:
Take stale bread and cut into cubes. Heat the oil in a large pan with a clove of garlic (whole, quartered, chopped … as you like!). When the oil fries, thrown there crumbs, salt and rosemary. Let them get brown without burning. When ready, add pici directly into the pan and sauté for a couple of minutes. Serve hot with a sprinkling of chillki to taste.
