Pear & Plum Crumble
Inspired by Silvana’s plum crumble and by some plums more dead than alive that stared at me disconsolate from the fruit bowl, I put together this delicacy (modesty aside 😉 ).
Easy and quick to prepare, as all the crumbles is excellent just lukewarm; or you can serve it with some vegan whipped cream or vegan ice cream; or, if you really want to hurt yourself 😀 with some custard. Yesterday me and my “beast” had it “natural” and I think I’ll do the same this morning for breakfast with my tea.
Ingredients:
100 gr flour (I used a mixture of wholewheat, 00 and oat)
40 gr white sugar
25 gr soy butter
25 ml sunflower oil
a pinch of salt
2 pears
6 plums
80 gr sugar cane (type Dulcita)
1/2 teaspoon vanilla powder
a bit of apple juice
soy butter or margarine for the cake tin
Method:
I first peeled the pears, I cut them and the plums and I put them together to season in a bowl with sugar and vanilla, adding a few spoonfuls of apple juice, as the pears were a bit hard (maybe I should have first blanched them). Then, I mixed the flours with sugar, butter, oil and salt (actually I doubled the amount, I had no clue about “yield” of the dough, which has been left over and put in the freezer), to form a crumbly dough. I placed the fruit into a buttered and floured baking pan, I coated it with the crumbling and baked at 180 degrees for 40 minutes. Goooooooooood.
