Peach Tart

This is the period of tarts on Veganblog. … And I also add my own contribute!

300 grams of flour, I used 00 and Manitoba (very strong Canadian flour)
80 grams of sugar cane
1/2 packet of cream of tartar
1 pinch of salt
1 pinch ground cinnamon
grated lemon zest
80 grams of soy butter
warm water as needed
2 tablespoons of apricot jam
1 peach

I mixed well the dry ingredients in a bowl and added the soy butter, previously melted in saucepan over a very low heat, and a little of warm water; then I kneaded the dough adding a little water, until it was very well mixed and I put in the freezer to chill.
I switched the oven on to 180 degrees and I prepared the peach, cutting it into thin slices; then I got the dough, which was well firmed in the freezer, and I rolled out by hand in a silicon mold; I spread the jam over the dough, I covered it with slices of peach and dusted with a teaspoon of brown sugar … then in the oven for 30-40 minutes!
It’s deliciously fragrant and excellent!
