Pisarei e Fasö

“Pisarei” is a typical dish from Piacenza and its province, ingredients are very poor (flour, bread crumbs, beans), but it’s definitely tasty.




Unfortunately, I think it’s impossible to find them in restaurants in a vegan version (they often use lard in the sauce, and anyway butter and cheese for sure); but the dough for gnocchi is already vegan, while the sauce is easy to remedy….

Ingredients:
(serves 4-6)
For pisarei:
300 gr breadcrumbs
500 gr flour
boiling water
salt
For the sauce:
tomatoes
fresh beans
garlic, onion, celery
extra virgin olive oil
bay, rosemary, sage, pepper and salt

Method:
For the dough, you have to mix the bread crumbs with boiling water, then add flour and salt. Knead it and leave it to rest for half an hour. Then, picking pieces from the dough, make a lot of “little snakes” …from each “snake”cut off a piece of dough and let it crawl on the table with your thumb. I had made them only once, years ago with my grandmother and and my hands were not used to it… the first I came up with were pretty awful, but towards the end they were better. However, if you have a look on the internet you will easily find good images of them…
Personally, when I prepare a dish a little special, I like everything to be as fresh and homemade as possible, thus, fresh tomato sauce, fresh beans … but of course if one doesn’t have time you are allowed to use ready made tomato sauce and canned beans, even if do not recommend it!
Anyway, once the tomato sauce and beans are ready (I let beans boil in a pressure cooker for about ten minutes), I fry onions, garlic and celery (and carrot, but I hadn’t!), finely chopped, on a low heat. I add tomatoes, beans, spices, and I let them cook for a while, so that the tomatoes absorb well the flavour from the beans.
The pasta cooks in a flash, when they come to surface they’re done … mix them with plenty of sauce and yum! ready to be eaten.
If you drink wine, they’re excellent with a glass of good gutturnio, always from Piacenza.
