Artichokes & Aubergine Patties
I’m home today, so I indulged in the kitchen, using all the vegetables I had in my fridge. Plus, tonight I am having dinner with at Vale’s with my other girl friends (Fra, Ele, Claudia), and what a better occasion to try a new recipe?
In fact, yesterday I bought the magazine “Cucina Moderna Oro”… and there was a special section about patties… every type, shape, ingredient. … Beside those with meat, there are a lot of them made of vegetables … so I mixed and veganized more recipes and here it is the result. … good!
Ingredients:
1 aubergine
frozen artichokes
breadcrumbs
parsley
garlic
substitute for grated cheese
sesame and sunflower seeds
Method:
I washed the aubergine, pierced it several times and put in oven at 180 degrees for about 30 minutes. Then I cut it into halves and I let it cool. Once cooled, I peeled it, squeezed the pulp and put in a bowl.
I boiled the artichokes in salted water, I squeezed them and added to the aubergine.
I added the cheese substitute, parsley, 3 cloves of garlic, breadcrumbs, salt and pepper.
I processed them all in a blender (adding a little salt), and added bread crumbs to obtain a consistency not too soggy and sticky.
I prepared a mixture of breadcrumbs, (substitute of)cheese, sesame and sunflower seed (and a pinch of salt)
and I passed the patties there.
I brushed them with oil and baked in the oven at 200 degrees for 15-20 minutes.
