Yesterday I needed to release some tension, so why not to prepare a good cake?

(for the pastry)
300 gr of flour (I used up what I had at home, 00)
100 gr of cornstarch
125 gr of  margarine
1 bag vanilla baking powder
soy milk to taste
80 gr of sugar
(for the filling)
a can of peaches in syrup
300 ml of soy milk
150 ml soy cream
almonds aroma
2 tablespoons of sugar
flour as needed

Work margarine and sugar together to obtain a smooth cream, then add all the dry ingredients and finally the milk. Knead until you get a smooth and firm mixture. Let it stand half an hour.
Meanwhile prepare the filling. Bring to a boil soy milk, soy cream and sugar. When it begins to boil, slowly add the flour and stir vigorously, without stopping, to avoid lumps. When the mixture begins to thicken, turn the fire off and add almond aroma, almonds and chopped peach with a little of their syrup.
Roll out the dough on the baking paper, place it into the cake tin, fill with cream and then decorate as you like.
Bake in preheated oven at 200 degrees for 50 minutes.

    I like the idea of mixing soy cream, almonds and fruit (peach, here) for the filing. It’s something different, smoother perhaps, and really juicy 🙂
