Chocolate & Nuts Muffins
Since these days chocolate and nuts cakes are in vogue on Veganblog, I took inspiration from various recipes and I made these soft muffins!
Muffins are so nice: they quench your thirst for sweet without overdoing the quantity, they are nice to see, practical to take with you for a snack outdoor and can be prepared so many ways!
Ingredients:
100 gr of manitoba flour (very strong Canadian flour)
50 gr of wholewheat flour
100 gr of flour 00 (instead of the mix of flour I used, you can use 250 grams of flour “00” or use your favorite mix)
50 gr of cornstarch
100 gr of sugar (I used cane sugar)
4 tablespoons of cocoa powder
250 gr of hazelnuts and walnuts
300 ml of vegetable milk (I used to soy)
50 gr of dark chocolate, cut into small squares
a sachet of baking powder
a pinch of salt
a quarter of a pack of rice cream
Method:
Turn the oven on to 170°C. Combine the flours with cornstarch, cocoa, sugar, baking powder and salt in a bowl. Leave aside a handful of nuts for the decoration and blend milk, cream and remaining nuts, not too long, so that nuts are finely chopped but not pulverized. Add the this mixture to the dry ingredients and mix well. Add the diced chocolate (let the “squares” quite big, they will melt in the heat of the oven, and you’ll find these tasteful pieces while biting the muffins…). Put the mixture into the muffin molds, sprinkle with remaining ground hazelnuts and bake for 30 minutes … What an aroma!
