Mock Pomegranate with Thyme


Come on, do they not seem pomegranate seeds?? I did not expect such a result, I mean so red. Therefore, even if it’s simple … I decided to post very quickly this recipe!

50 gr of barley
1 beet

Boil the beets for the time necessary, drain and peel them, chop coarsely and mince them roughly. Meanwhile cook the barley in the water where you have boiled the beet, drain it, add it to the beets and garnish with thyme leaves.
Simple and fast (while it all cooks, you may well do the other things!), ideal for someone who, like me has no time for too elaborate meals (because of study…), but still wants to obtain a feast for the eyes as well as for the palate! I’m wondering how pink-ish it would have been if I had mixed it with a little vegetable cream…

    You’re definitely right! Looks like a plate of pomegranate seeds. I can’t imagine the taste of beetroots+thyme, I’ll have to try this out
