Kourabiedes
These delicious greek-turkish cookies are perfect to go with a nice mug of hot tea, or rather they call for it!
Basically I haven’t changed a comma of JeanMichel’s recipe from “Cucinare Lontano“, so I can only thank him for this little gem.
Ingredients:
400gr of flour 00
80gr of jarabe sugar
250gr of soy butter, room temperature
1 teaspoon of baking powder
a pinch of vanilla powder
1 teaspoon of orange flower water
100gr of icing sugar for dusting
Method:
Work the butter until it gets creamy, then add sugar (using jarabe sugar, I ground it a bit to get the texture of granulated sugar), vanilla, orange flower water and baking powder.
Mix well and add sifted flour; wrap the dough with cling film and let it stand for half a hour in the fridge.
Preheat oven to 170°C.
Roll out the dough about 1 cm thick, cut out biscuits and bake them for about 20 minutes, they shouldn’t get too coloured, in fact they should remani practically white.
Once removed from the oven, allow for them to cool, then sprinkle generously with powdered sugar.

They must be sooo fragrant!!! They are similar to italian “canestrelli”, aren’t they?
