Green Sauce

a bunch of parsley
the crumb of a thick slice of bread, a little bit stale
1 tablespoon full of capers
a large cucumber pickles
extra virgin olive oil

Soak the crumb of bread (without the crust) with vinegar, I prefer to the apple one, and mash it with a fork; add a little vinegar at a time, not to risk to soak too much the mixture, obtaining a dip too sour; and if you think have put too much vinegar, just squeeze the bread with your hands to remove the excess.
Wash and dry the parsley, mix all ingredients together adding a little oil at a time, until you reach desired consistency.

Serve it at will on grilled bread, soups, etc..

    It muust be really tasty and versatile!! I think I’ll try this out wuth some plain seitan 🙂
