Mushroom Canederli


I’d like to propose the recipe for “canederli” (here with mushroom sauce), a dish that I always used to eat during my holidays in South Tyrol, and that I thought it was impossible to veganize … but …

(serves 4)
350 gr of bread (I used those round ones) – not fresh but not too stale. I let it dry a couple of days before using it
3 onions
tap water
salt and pepper
parsley / chives
For the sauce:
fresh mushrooms
vegetable cream
salt, pepper

Cut the bread into squares and put them in a bowl.
Meanwhile, cut the onion and brown it with 1 tablespoon of oil. Once the onion is done, add the bread (don’t use it all, I’ve left a little for the sauce). Mix bread, onion, add salt and pepper and begin adding water, until the mixture is fairly firm. I usually add some chopped parsley, but when I learnt to prepare this dish in the mountain hut where I used to work, we did them with chives.Should be the same, everybody uses the taste he preferes … Here, I used some parsley in the mushroom sauce and some chives above. Anyway, add the herbs you prefer and form some pellets.
Meanwhile, cut the mushrooms and cook them, in the same pan where we left the onion (it’s a pan less to wash! 🙂 ). Once they are done, add cream, salt, pepper and other herbs, if you want.
For the cooking … I was afraid that putting them in the water they would have gone pulpy, so, to be on the safe side, I steamed them… but next time I’ll try and put them directly into the water, I think that they should hold up with no problems!
(In theory, the original recipe uses milk, not water. So it should be sufficient some vegetable milk, but lately I’m learning a lot of things – for instance, that often, instead of milk, you can simply use water to get the same result.)

    Nice photo! I want to try these, but what are the 2-3 large balls made of? Is it bread?

    Hi Tokyovegan, yes, it’s bread, soaked with vegetable milk, and mixed with onions and herbs. it’s a typical dish from North Italy, they’re very good! you can dress them how you prefer, although a creamy sauce like this above it’s your best option.

    Nice sooo Yummy!Canederli are also very popular in Germany, better know as Klöße or Knödel. I never tried to do it by my self, but… with this recipe…I have to! Thnx!
