Blueberry Cookies

I made these cakes to bring with us during our ornithological trips on the weekends. Generally I always carry something with me to appease the “beast”, and her parents too ;-), but today my pantry was really runing short of everything and I invented these cookies from a scratch.


Ingredients:
(makes about 15 cookies)
150 gr manitoba flour (very strong canadian flour)
5o gr oat flour
50 gr cornstarch
100 gr of oatmeal
125 gr white sugar
a pinch of vanilla powder
a pinch of salt
1/2 packet of cream of tartar
100 gr blueberry
3-4 handfuls of dried cherries
50 ml sunflower oil
50 m. soy milk
100 ml apple juice

Method:
I first mixed all the dry ingredients, adding finally the cream of tartar, sifted; then I added the dried cranberries and cherries (a true delicacy which we found in a supermarket in Corsica, where there were all nuts that your wildest fantasies can imagine… why here do we find just raisins, plums and apricots 🙁 ? ). Then, with the help of the “beast” who has now become very good at slowly pouring the liquids, I added oil, milk and apple juice to reach a sticky consistency, halfway between the dough for a cake and that for biscuits. I poured the mixture in spoonfuls on the baking sheet lined with baking paper and I baked at 180 degrees for twenty minutes, until golden brown. Delicious!
