Stuffed Onions


Fragrant cherry tomatoes are still in sieason, I and I stuffed these onions with them.

Red onions medium / large
Black olives

Peel the onions and steam cook them for about 20 minutes. Then cut them in halves, remove the core and chop it. In a large pan, heat three tablespoons of olive oil, add chopped onions, halved tomatoes, olives and minced capers. Add salt and oregano, and saute’ on a high flame for few minutes.
Arrange the onions on a baking tray, fill their cavities with onion and tomato sauteed and bake in a hot oven at 200 degrees for 20 minutes. They are a great accompaniment for seitan and potatoes!

    This is smart! I’ve always loved onions, but I wouldn’t cook them just alone..this is a good way to taste them
