Bread & Zucchini Rissoles
I have to use tons of stale bread, the reason being that when I make bread, they are often experiments, and often bread comes out as hard as a stone, as it fails to rise!
Therefore I bake it anyway and then I recycle it in various ways. I’m talking about bread made with organic wheat flour, stone ground, which deserves to be recovered in any possible way !
Ingredients:
stale bread cut into small pieces
soy milk
cardamom
harissa
black pepper
grated zucchini
bread crumbs
Method:
In a bowl I put the bread and I entirely cover it with soy milk, I add spices and let it rest until bread has softened.
I grate the zucchini and let them drain in colander with a pinch of salt, or I use only the green part, which is less watery, and I mix it with the bread mixture.
This time my dough has rested for 24 hours, for lack of time!
I remove the cardamom, I blend or crush the bread with a fork, and add more grated bread, to form a mixture that can be handled to form into pellets.
I passed them in bread crumbs and let them rest in the fridge for a couple of hours; then I’ve fried and eaten like just as they were… … they are delicious!
