Seaweeds & Cannellini Paté
I have a confession: I hate seaweeds. All of them. I can’t cope with them, at all! In the last three years I’ve been trying to persuade myself that they’re actually good, that probably I just didn’t cook them the right way and bla bla bla.
In the end I came up with this paté, which I found fairly interesting….and for the first time I could have seaweeds! I’m happy as I know that they are a true concentrate of good stuff (vitamins, minerals and so on). If you have the same problem, try this out!
Ingredients:
1 small handful of hiziki
1 small handful of arame
1 small handful of wakame
i can of cannellini beans
1 teaspoon of miso
shoyu
1 tablespoon of minced carrot
1 tablespoon of minced celery
1 clove of garlic, minced
olive oil
1 lime
1/2 teaspoon of harissa powder
some fresh thyme for garnish
Method:
Soak the seaweeds for 20 min in cold plain water. Then, place them in a sauce pan with enough water and shoyu to cover them. I put 2 part of water and 1 of shoyu, but I think it really depends on your taste. Anyway, cook the seadweeds until they get very soft and thewater has evaporated. Remove them fro the pan and let them cool for a while. In the meantime, in the same sauce pan, sauté garlic, carrot and celery with a tablespoon of olive oil. Once brown, add the cannellini beans, without their water. Let them heat for a few minutes and add the seaweeds. Let the mixture cook on a low heat for 5/6 minutes and remove from the fire. Process it with a hand blender, and add the lime juice. Garnish with harissa and thyme and let it cool in the fridge for 1 hour.
Well, for the first time in three years they didn’t disgust me 😛

well…my partner had 3/4 of it and I had the rest, in 2/3 days I mean…which is not that much but at least I had some seaweeds!
Pretty interesting, I have seaweeds only with miso soup, which means maybe 5/6 times per year, I should increase the dose I’m afraid. This looks good
