Ingredients:
100 gr of soba
the ” beards” of 2 fennels
a tablespoon of tahini
1 tablespoon sesame oil
1 pinch of salt
water as needed

Method:

The soba is to be prepared as follows: cook it in boiling water without salt. Once done (it takes a lot less than italian pasta), drain it and pass it under cold water, to avoid it to become a stick ball (which is what happened to me the first time I did it, ih ih!).
I prepared a sauce by putting the beards of fennel in blender (it is also a good way not to throw it), olive oil, tahini, salt and water as needed. I blended it well. This is the sauce for the soba.
I put the pasta in a pan, I poured over the sauce and made it saute’ for a few minutes. Do not expect the flavour of spaghetti, you would be disappointed. The form can be misleading, but soba has nothing to do with spaghetti. The flavor is that of buckwheat, the texture is different, the aftertaste as well. I really like it and will be very useful on cold winter days, because it has reinforcing and heating properties.

    I like soba! I’ve been seriuolsy intolerant to gluten a couple of years ago, and I used to have a lot of soba. I did like it! I really want to taste your fennel sauce, must be soo yummy 🙂
