Marinated Tofu Skewers


I have been wanting to prepare them for a long time. I’ve got this idea buzzing in my mind for a while, but, you know, the lack of time … Well, finally I made them today and we enjoyed them very much!


(You decide the quantities)
natural tofu and smoked tofu (the latter optional)
For the marinade:
soy sauce
balsamic vinegar
smoked salt or spices to taste (optional)
To decorate:


Cut your tofu into cubes about 2.5 cm.
Here it is mine, home-made (I’m always satisfied every time I do it, is so firm and especially good, with no bitter aftertaste of nigari)

Let it marinade for a day or overnight (in the fridge) in a bowl with a little soy sauce, some drops of water, very little balsamic vinegar and smoked salt or spices to taste.
A few days ago, in a Chinese and Japanese grocery, I found this, which by the way is an Italian product …

I must say it’s delicious, the smoked tea leaves release their smoky flavor and smell.
Here they are my tofu cubes after the marinade. (Every now and then I shook them to season them well ­čÖé ).

Clean and wash carrots and zucchini. Cut into strips with a mandolin and scald them for one minute in boiling salted water. Pass them in cold water and drain.
Remove the cubes of tofu from the marinade, wrap them in ribbons of zucchini and carrots and stick them with the skewers, alternating them with sliced tomatoes and olives. Cook them for a couple of minutes on a large nonstick pan or hot grille.

Garnish the platter with strips of remaining carrot and zucchini, chopped parsley, basil leaves and rosemary sprigs.
