Aromatic Basmati Rice


Basmati with orange, pine nuts and curry.
I wanted to publish this very simple risotto, which I love as intersection of sweet and sour flavors – in this case the orange becomes sweet like beetroots, in contrast to the curry and red cabbage. In dishes I like to mix cooked and raw foods and vary.

brown basmati rice
pine nuts
a little oil
himalayan salt
cooked beetroots (for convenience mine were already cooked)
raw red cabbage, cut into thin strips, seasoned with salt and olive oil

It is very important how you cook the rice to enhance the famous aroma of basmati: boil it in a double volume of water with a pinch of salt, without turning it and over low heat. (The problem of rice is that it takes almost 20 minutes of cooking).
Marinate the pieces of orange with spices, pine nuts and a little oil; once the rice is done, pour it into the rice.
It is creamy, that is a feature of the brown basmati rice.
Cabbage and beetroots with rice as an association to the rice is also excellent, and with taste and imagination you can do a lot of matchings!

    Really interesting, I’ve read several times that orange ad beetroots go very well together – it’s time for me to try this combination, i suppose 🙂

    Pretty curious about himalayan salt! mustn’t be that easy to find. I don’t particularly like raw cabbages, so maybe I’d leave it out, otherwise is cool!
