Pea Creamy Soup


Tasty, fast, nutritious, is “a must” of my winter evenings on the couch 🙂

3 medium carrots
1 stalk of celery
1 small onion
1 clove of garlic
3 handfuls of peas

In a pot, place carrots, peeled and cut, together with celery, onion, garlic and bring to a boil. Add salt and cook 3/4 of an hour. Add the peas (in this case I used frozen ones, but obviously it comes out very well with dry ones as well…) and cook for about ten minutes.
At this point I remove the stalk of celery, to avoid that the soup is too “celery” and garlic, to avoid that my boy turns the other side when he sees me … 😉 and then I pureé peas, carrots and onions with their broth to reach the desired consistency.
Excellent garnished with some sunflower seeds and accompanied by spelt croutons :-).
