Onion and Cider Soup
Actually my boyfriend cooked this recipe for me a while ago, he said the inspiration came from somewhere on the internet. It was delicious! He spent half an hour peeling onions, poor boy, but (from my point of view :-P) it was worthwhile!!
The cider gives it a delicious sweet-sour flavour.
Ingredients:
(serves 2)
1 tablespoon of e.v.o. oil
2 large white onions, thinly sliced
1 cup of vegetable stock (I actually didn’t use it, I don’t like stocks at all! I used the leftover broth from my homemade preparation of seitan π )
2,5 cups of apple cider
4 large thyme sprigs
1 pinch of cinnamon
salt and pepper to taste
Method:
Finely slice the onions. In a large pan, sautΓ© them with the olive oil, until soft and dark brown – takes about 20 minutes. Now, add cider, broth and thyme. Bring to a boil. Reduce the heat and add cinnamon, salt and pepper. Let the soup simmer for about 25-30 minutes, uncovered. Remove the thyme sprigs and serve with chopped fresh thyme. It was delicious still hot, but I think it would be very good as well if prepared one day ahead and rewarmed a litte before serving it just lukewarm.

I like it! I think I light like to blend it, to get it more creamy and smooth. Otherwise sounds delicious!
