Rasp-Choc Cake

That is a chocolate cake with raspberries 🙂
I know it’s not the right season for raspberries, but my father loves them, and this cake was for him 😀


Ingredients:
for the cake:
230 gr of flour
20 gr of wheat starch
140 gr of brown sugar
1 tablespoon of white sugar
6 tablespoons of unsweetened cocoa
250 ml of vanilla-flavoured soy milk
sparkling water as needed
6 tablespoons of vegetable oil
2/3 tablespoons of dark rum
1 tablespoon of apple vinegar
baking powder (or cream of tartar + baking soda)
for the raspberry sauce:
200 gr of raspberries
60 grams of white sugar
60 ml of water
lemon juice

Method:
In a bowl mix all the dry ingredients except the baking powder. Add soy milk, slowly, stirring to avoid lumps. Add the other liquid ingredients and finally the baking powder.
Oil and flour a cake tin and pour in the mixture. Bake at 180°C for 45-50 minutes.
Meanwhile, prepare the raspberry sauce: In a saucepan boil the sugar with water, and cook for 5 minutes. Combine the raspberries to this syrup, leaving aside some of them, and cook for 10 minutes.

Once the cake is ready, remove from the oven and then let it cool. Cut it in half and fill it with the raspberry sauce.
I sauteéd the remaining raspberries in a pan with a little sugar and very little water, then I’ve drained them and with their liquid I wet the surface of the cake, while with raspberries and I made a simple garnish.
The result was very much appreciated 🙂

    This is genuinely delicious!!!! I’ve never tried choc+raspberries, only chocolate and strawberries…but no doubt is a real treat

    I did it once – just a simpler version, mixing the pureed raspberries in the dough…was pretty good and moist, but their flavour was barely perceivable. In this regard, yours must be far better!
