Beet-raw Soup
…with coconut milk and lime!
Here it is a colorful (even too much …) beetroot creamy soup. All raw!!
Ingredients:
two raw beetroots
3 tablespoons of coconut milk
water
2 tablespoons of lime juice
pepper, if you like
pistachios (to taste) – be careful with them (or with other nuts you may want to choose) as if you really want to prepare a raw dish, they have to be not roasted!
Method:
Peel the beets and wash them. Now, if you have a real food processor, you can chop the beets, place them in the container, add lime, water and coconut and mix. Those who, like me, have a ridiculous food processor, will have to undertake the additional step, which is to grate the two beets with the grater (big holes, of course). I let you imagine the effects of this on the candor of my kitchen, even if they leave little to the imagination :-P. Once you’ve done this intermediate step, everything ends up in the blender or food processor anyway. I had also left some sprigs of grated beets, which had miserably drowned in the soup and you can’t practically see them. However, pour the soup in your bowl, add pepper if you like, if you like pistachios (or other dried fruit) and the decorative beetroot sprig. At this point you can call the cleaning company and the painter, in this order :-P. However, it was really good and filling! I think a little fresh coriander would have combined well, as it adds a note even more fresh.
Soooo colorful! Can’t imagine the taste of beetroot+lime+coconut and I can’t say I like raw foods, this is interesting though

I like cooked beetroots, never tasted them raw. I’m interested but also scared for their…explosion of colour
