Risotto with Radicchio
This is today’s lunch … we needed to use up what abounds in this home … radicchio! And here it is a risotto!
Ingredients:
(serves 4)
500 grams of rice (Carnaroli is the best for risotto)
1 radicchio
1 onion
extra virgin olive oil
salt
white wine
vegetable broth
Method:
Wash the radicchio, divide it into four slices and cut it into strips … sauté the chopped onion in a saucepan with olive oil and add radicchio…let it sauté, add salt and rice, stir to toast it a few minutes … then, blend it with the white wine; then, once it will have been all absorbed, just keep on cooking, adding broth, a little at a time, stirring … I had a broth where I cooked some Swiss-chard and I used that … it takes about twenty minutes and then is done!

I love this risotto too, and I usally add a tablespoon of unflavoured soy yogurt, just to make it creamy 😉
Is it sour? Never did it nor tasted but I don’t appreciate radicchio tha much when raw
