Cookies!
For a long time I’ve been looking for cookies suitable for macrobiotics (no sugar, not even cane one, no margarine, no chocolate …) and finally I found them! I think it’s the first time that a macrobiotic sweet … really tempts me!
Ingredients:
(makes 22 cookies)
1 cup of cereal flakes, 115 grams (I used mixed grain)
1 cup of whole wheat flour, 125 gr
1 teaspoon of cream of tartar
1/4 teaspoon of whole salt
1/4 cup of hazelnuts, 30 grams
1/4 cup of raisins, 30 gr
1/8 cup of sesame oil, 20 gr
1/2 cup of maple syrup, 125 g
1 vanilla vanilla
Method:
Put the cereal flakes in a blender and operate it for a few seconds to break them a bit. Transfer them into a bowl and add flour, cream of tartar, salt, raisins and hazelnuts (also chopped a bit). In another bowl combine oil, maple syrup and the seeds of a vanilla pod. Mix thoroughly the contents of the two bowls separately. Now, pour liquids ingredients into the bowl with the dry ones and stir well to get a smooth mixture. Then form the cookies (as explained below) and bake them in hot oven (180 degrees) for 10-12 minutes.
To form the cookies I used the cup of 1/8 size, as I wanted them to be small, so that I can bring them with me in my new bento 🙂 I simply picked the dough directly with the cup, then crushing it well to compact, and then I dropped it on the baking sheet (well … let’s say that I beat the cup!).
Ps: I have already in mind some variations…let’s see, let’s see!

Great! they must be very crunchy! If your problem is the sweetener, I thinkg that microbiotics accepts, beside maple syrup, malts and other fruit syrups as well 🙂
