Sicilian Orange Salad
To remember the land of my memories, I add this orange salad, as prepared in my family!
Ingredients:
oranges
dried figs
dates
almonds
nuts
raisins
1 onion
vinegar, extra virgin olive oil, salt, pepper
Method:
First of all, finely chop the onion and put it in a cup with a bit of vinegar, to marinade for a few hours.
Then, peel the oranges and cut them into triangles, if possible of equal size. Combine it with chopped figs, dates, raisins, almonds and chopped walnuts in various sizes (some of them whole); finally, add the onion with a little of its vinegar. Season with oil, salt and pepper. Let it rest a bit in the fridge before serving.
Among the reasons why I might prefer winter to spring, beside a warm hug waiting for you and the snow falling in right days, there are the oranges as well …
