Red Onion Chutney
This is a sauce, ideal as an accompaniment to white rice or sandwiches, or sliced vegan ham/salami.
I found this recipe in a newspaper and I wanted to try it at all costs! I love red onion and I love chutney! I find the maximum pleasure eating it with white rice and a banana. Tip of my roommates, who used to have it in Tanzania.
And I also recommend it to you! 🙂
Ingredients:
600 gr of red onion
lemon juice
100 gr of brown sugar
a glass of white wine
a teaspoon of mustard
2 bay leaves
a teaspoon of salt
Method:
Really easy! Combine all the ingredients in a pot, cover with lid and cook over a low heat for at least a hour and a half.
Every now and then, check it to be so sure it’s not too dry; add water should this happen.
Then, pour it in a glass jar and … enjoy!
Considerations:
I recently met a Danish vegan guy with a passion for Italy (he is also studying Italian!); he’s a member of an organization for the protection of animals. I hope I’ll also join it soon!
