Soy Chunks with Radicchio


Lately I’m preparing soy chunks at least once a week, as they can be done in so many ways, each of them very tasty.
Today I wanted to try a combination that I really love: radicchio and potatoes, taking advantage of the absence of the “beast” (at the sad school refectory), who doesn’t like radicchio.

(serves 2)
80 gr of soy chunks
a medium potato
an onion
half radicchio
a few leaves of sage
a few tablespoons of vegetable cream (I used soy one)
extra virgin olive oil
broth for cooking chunks

Simple, as usual. I put some water in a pot, and when it started boiling I first pour a little granular veg bouillon, half a courgette and half a carrot (what I had in my fridge…) and immediately after the potato, chopped. I let it simmer for 5 minutes and added the soy chunks. Meanwhile, I finely chopped the onion and I let it brown in my new ceramic pan, together with dried sage and a dash of extra virgin olive oil; I also cut radicchio into strips which I kept aside. After, say, 15 minutes, I drained potatoes and soy chunks and I added them to the the diced onion; I let them brown for a few minutes, then I added cream and radicchio, mixing well until the latter was done. I seasoned with salt and pepper and served piping hot.

    soy chunks! I’m just preparing them now with tomatoes, aubergines, red wine and basil. But I must admit your version with cream sounds delicious

    Must be so good! Never tasted potatoes and radicchio together. Sounds delicious!
