Aubergine Ragout


In these days I’m always on a rush .. and I thank my Mum who always prepares something for me… but today the sauce … I wanted to do it on my own … eheheh! (although I already had cooked vegetables … … ehehh!)

Soya Milk
Extra Virgin Olive Oil
Pine nuts

In theory, I should have cut the eggplant into cubes and sautée them in a pan with a little oil and garlic  … but having already done that … it was much faster and easier …!
Just combine cooked aubergines, soy milk, salt and paprika a process everything … pour the oil very slowly from the little hole on top of the blender….!!! Add almonds and pine nuts and process it again … … eheh! Enjoy your meal  …. My grandmother has appreciated it a lot!! …. Super kisses!!!!
