Spinach Soup
Hi there! This is a quick and very nutritious soup, definitely suitable for this season, as it starts getting cold (yesterday morning it was 4°C!!). Spinaches ar rich in vitamins and mineral, as well as miso and seaweeds. It’s also a good way to eat seaweeds… I can’t stand them in their own, while in thi soup it’s quite difficult even to perceive them.
Ingredients:
(serves 2)
2 huge bunches of spinaces (I think for an overall weight of about 400gr)
1/2 carrot
2/3 sage leaves
1 garlic clove
1 tablespoon of miso
1 tablespoon of extravirgin olive oil
3 tablespoon of dried seaweeds (I used wakame, hijiki and arame)
3/4 of glass of soy milk
some soy yogurt to serve
nutmeg
Method:
Cut finely garlic, sage anf carrot and sautée them in a tablespoon of olive oil. Add miso an stirr well. Let it brown for a few minutes and add the spinaces, you can cut them but it’s not necessary. Let them season a bit, stirring and after 5 minutes add some water. Add the seaweeds and cover the pan with a lid. Let it simmer for 5 minutes. Remove from the heat and purée with a hand blender. Add the milk and stir well. Let it cool a little and serve, adding a little of soy yogurt to taste. We also added nutmeg (which is fabulouls with spinaches!) and my boy also a little pepper freshly ground. It was so hearthy!!! Just what I needed 🙂
