Little onions kebabs


I want to dedicate this recipe to the beautiful Eleonora NW3, and to all of you, old and new veg-chefs!!!! I’ve been away from this blog for a long long while… πŸ™ too much! But now I’m back home!!!!! πŸ˜‰
I love all of you!

I had seen these small kebabs in a jar in a supermarket and I was strongly tempted to buy them, but then obviously I preferred to buy individual ingredients and prepare kebabs by myself! πŸ˜‰

a pack of little onions (in Italy they’re called “cipolline borettane”)
1 glass of apple vinegar
2 glasses of water
extra-virgin olive oil
capers (without salt)
skinned peppers

In a saucepan bring to the boil 1 glass of apple vinegar with 2 galsses of water, salting lightly. meanwhile, peel the onions, wash them under running water and boil them in water and vinegar for about 7 or 8 minutes.
After this time drain the onions and leave to cool in a dish. Cut squares from some peppers flaps already peeled and put them in a dish with capers (washed under running water to eliminate salt). I don’t digest the peppers if not peeled, so I’m used to dip them in boiling water for some minutes first, just to be able to lift away the skin easily. If you want you can leave their skin on, of course!
Resume onions and grill them possibly without adding oil…(less oil is better! πŸ˜‰ ). Then just insert a toothpick in caper, a piece of peppers, a grilled onion, another piece of peppers and another caper closing. And go on like this for every toothpicks, until exhaustion of all ingredients. Arrange in order kebabs radially in a plate and sprinkle with extra virgin oil.
About how grilling the “borettane onions” I searched on the web and I modified the recipe that I liked most, simply increase the cooking time of onions in water and vinegar, omitting the oil while grilling them (I preferred to restrict condiments!) and the addition of sugar. However, my friends liked these kebabs, so I hope you like them too! πŸ˜‰
