Mayo Cookies
These are cookies definitely suitable with a cup of hot tea, for cold and rainy days 🙂
They are so called since their basis is just mayonnaise, or rather “soyannaise”.
Ingredients:
(for the mayo)
150 gr of seeds oil
75 gr of soy milk
juice of 1/2 lemon
a pinch of salt
a pinch of turmeric
(for the cookies)
vegan mayo
120 gr of crushed cane sugar (I make it by putting it in a blender with a tablespoon of potato starch)
225 gr of flour
1/2 packet of yeast
pine nuts for garnish
dark chocolate
Method:
For the mayo: pour all the ingredients in the blender jug and mix them well.
For the cookies: combine sugar, flour and baking powder and then add the mayo to the mixture, creating a somewhat mushy dough. Line a baking sheet with some baking paper, take a bit of dough with a spoon and place it on a baking sheet. Place the dough with your fingers, I haven’t given them a shape … because I wanted them to be rustic:)
Place 3 pine nuts on top of each cookie, but this is really optional 🙂
Bake in oven at maximum temperature (mine is 250°C) for 8 to 9 minutes, check them anyway as you never know! 🙂
Once cool, garnish with melted dark chocolate, but this is optional as well…
