Baked Tofu


A simple recipe for wimps or “dummies”, but really tasty. Anyone can do it for any occasion, because it is tasty, rich, filling and good!

200 gr of tofu
4 large potatoes
1 large onion
extra virgin olive oil

Cut the potatoes into chunks. I’ve baked them with the skins, but you can peel them. Cut the tofu into cubes of about 3 cm in diameter. Peel the onion, cut it in half, slice it along the lines of the “grain”: doing so you’ll never weep! Put all these ingredients in baking pan, oil well (do not be greedy), add salt and pepper and bake at 220°C for about 30 minutes. The tofu will get a nice crust; to be sure it’s ready, just check the cooking point of potatoes. Remember to stir occasionally.
