Lentil Soup with Artichokes & Mushrooms
It’s getting cold, time for hot soups … Lentils can be considered a food-medicine.
They are the most digestible legumes, have high concentrations of iron, potassium, phosphorus, calcium, B vitamins and fiber. They have a high nutritional value and vegetal proteins (24%) are completely assimilated by the body.
Oh yes! Lentils are so good for our bodies and our palates … therefore, today I made a beautiful and rich lentil soup.
Ingredients:
(serves 2)
150 gr of red lentils
a plate of diced pumpkin
1 medium potato
1/2 onion
2-3 tablespoons of oatmeal (optional)
3-4 frozen artichoke hearts
3-4 mushrooms
pistachios
sunflower seeds
flaked almonds
e.v.o oil
garam masala
ginger
curry
turmeric
coriander
salt and pepper
Method:
Wash lentils and put them in a pot, along with onion, potato, cubed pumpkin, a pinch of ginger, turmeric, coriander, curry, salt and pepper. Cover with water and let it cook. Once all the ingredients are done and soft, and the water almost absorbed by the ingredients, add the oatmeal to make the dish complete, and to add fullness and extra flavor. Let it cook a few minutes longer and turn the heat off. Set aside.
Cut the artichoke hearts in slices and cook them with the sliced mushrooms in a pan with olive oil, ginger, garam masala, salt and pepper.
Meanwhile, purée the cream of lentils with a hand blender and pour it in the plates. Once mushrooms and artichokes are done, arrange them in the center of the cream of lentils. Sprinkle with chopped pistachios, flaked almonds and sunflower seeds. Pour a little olive oil over the cream of lentils and … voila! The cream is served!
Very good! I love the matching of soft and creamy with something solid, the sweet of lentils and pumpkin with salt and flavor of the artichokes and mushrooms 🙂
