Sour-Sweet Fennel


I like fennel so much! … I would eat them prepared in a lot of ways but this is the on I like best, as I love the sweet and sour. I’m crazy for mixed pickles for instance!

1 medium fennel
2 tablespoons of soy sauce
a teaspoon of brown sugar
1 tablespoon of apple cider vinegar
1/2 tablespoon of seeds oil
20 gr of raisins

First, soak the raisins in water, in a covered container, and set them aside. Cut the fennel in halves, removing the inner part, the hardest; then cut it into wedges or strips. Wash thoroughly to remove soil and dry. In another bowl prepare the marinade. Whisk soy sauce, sugar, vinegar and oil. Must be a beautiful bronze-coloured emulsion.
Now, take a frying pan, large enough to contain the fennel in a single layer, place the strips you cut, pour the marinade over, place a lid with the hole to let steam evaporate; turn the heat to minimum and cook about 10-15 minutes, depending on the thickness of the pieces you cut. After 7 minutes, turn the fennel and add the raisins, put the lid and finish cooking. Serve sprinkled with the syrup that has formed on the bottom of the pan.

    I do not like fennel, at all, raw or coked ­čÖü maybe I should try this one

    I’m thinking of a raw versin of this….maybe letting the fennel marinate for some hours. Might be interesting, thanks for the inspiration
