Radicchio & Potato Pie

Easy to prepare and good to serve as a starter!

Ingredients:
vegan puff pastry
1 radicchio head
1 medium potato
some walnuts
soy cream
extra virgin olive oil
salt
pepper

Method:
Peel and finely cut the potato into slices, then cook it for a few minutes in boiling salted water. Once done, drain and set aside.
Wash and finely cut the radicchio. Sauté it in a pan with a little extra virgin olive oil on a medium heat; add salt and keep on cooking until done. Set aside.
Coarsely chop the walnuts.
Now combine all the ingredients in a bowl, add the soy cream and, optionally, a little pepper.
Roll out the pastry and fill it with the mixture. Bake at 200°C for twenty minutes and enjoy it!
