Super Purée


I rarely happen to have half avocado left over … I usually eat a whole one all by myself! But tonight I was in a rush and …. Here it is a super fast puré! Diana polished it off in a flash!

3 large potatoes
vegetable milk  to prepare the purée, to your choice (I used oat)
vegetable cream (I used soy)
half avocado soft, ripe, diced
extra virgin olive oil
a few drops of an organic lemon
sesame seeds
green nori seeaweed
margarine as needed, but just if you are extremely gluttonous (I avoided it here, as the avocado is already fat)
slices of vegan ham
a few drops of tomato sauce

Prepare a delicate potato purée with a little salt, pepper and of course veg milk … To make it very creamy and smooth, just process it with the food processor (with the plastic blades for kneading) and add the vegetable cream. Pour into the mixer also chopped avocado, a little extra virgin olive oil, a few drops of lemon.
When it’s creamy, pour it in a bowl and sprinkle with seeds and seaweed to taste to make it even more energetic and nutritious. Add a drizzle of olive oil and a little lemon. And a little pepper, if desired.
This is a very special way to enhance the potato pureé – which I very much love – but has really few nutrients :-)!
