Mediterranean Stew
…nothing new, but may be an idea for these rainy days.
Ingredients:
300 gr of cherry tomatoes: I used fresh ones that my neighbour had given me, but the canned tomatoes will be fine
1/2 red onion
a handful of black olives
a handful of capers
4 potatoes
300 gr of seitan
2 glasses of red wine
2 glasses of broth
rosemary, sage, pepper
Method:
First, I boiled the potatoes, whole and with the skins: I’ve cooked them, but not completely. I then drained them, peeled and cut into large slices. In a pot I put minced onion and I let it fry with a little oil: then I added the chopped tomatoes, olives (pitted) and capers, and let them simmer for 5 minutes. At this point I added seitan, roughly diced, herbs and potatoes and I let it cook for about 20 minutes, adding gradually the wine and broth to keep the stew liquid enough – otherwise how can do you dunk bread or polenta?
Serve hot.
