Dried Coconut Delicacies
My sister calls me (she’s always on a diet), saying that mum was coming to visit me, and challenges me: “have you got some light treats”? “Of course not, but I can always prepare some,” I say … I hear a rather sceptical giggle on the other side … I immediately start working and in ten minutes time these delicacies are ready! How did it go? I don’t know whether it’is the diet, the fact is that she never stopped eating them and none of them was leftover!
Ingredients:
(serves 4)
10 prunes, large and ready to eat
5 soft dried apricots
12 abundant teaspoons of grated dry coconut
orange juice
orange liqueur or rum
Method:
Finely chop the apricots, combine them with 10 tablespoons of grated coconut; add the orange juice and a bit of liquor and mix well. Stone the plums and press them with your thumb, to form a sort of little boat, where you’ll stuff the mixture; sprinkle coconut (the two teaspoons teaspoons) before placing them, one by one, in paper cups. That’s all, very fast.
