“Shira-aé” Pear

Impossible to resist the desire to share this recipe: it’s too good and when I like something I can’t help but talk about it! I keep taking part to various Japanese workshops – cooking classes in various institutes in Paris … this is again a course held by the Maison de la Culture du Japon à Paris … too cool these Jap-cooks! 😀

Ingredients:
1 pear with firm flesh, not soft like Williams to which we are accustomed, ripe ma hard
2 tbsp of ground white sesame seeds (goma-suri)
1/2 tbsp of miso
1/2 tbsp of sugar
1/2 tbsp of mirin
1/2 tbsp of light vegetable stock
some very thin slice of celery stalk

Method:
Prepare the sauce, heat the mirin in a saucepan on a low heat (or pass it to the micro-wave) for a few seconds to let the alcohol evaporate (at the course we were told that this operation will remove the smell of animal that it has), and it’ll make it brilliant.
Mix miso, sugar, mirin, and then add the ground sesame and vegetable stock.
Clean the pear, chop it into cubes, drizzle with the sauce and mix it gently, garnish with celery.
The three Jap-vegans starters they taught us at the course (white dressed pear, white root, carrot and persimmon-apple salad, leaves and petals of chrysanthemum salad):
