Fragrant Oat

These days I’m home with the flu, I open the pantry and I find this bag of oat that I had never used. Nothing’s better than oat to feel ok again!

Ingredients:
200 gr of oat grains
100 gr of cannellini beans
tomatoes (the last from my garden)
1 carrot
1 shallot
1 bay leaf
1 chili
2 sprigs of thyme
a few basil leaves

Method:
Soak the oat for a couple of hours. Bring it to a boil in three times in the volume of water, with the bay leaf and chilli. Continue cooking until water has been absorbed.
Meanwhile chop shallots and carrots and let them fry in a little oil. Add tomatoes, beans and spices and simmer for about twenty minutes.
Combine oat to tomatoes and serve warm.
