Orange Cookies

Finished yet another plum-cake, I decided to change the breakfast menu and I threw myself into cookies, as I have recently seen sensational ones here on the blog.

(makes about 25 cookies)
150 gr of allpurpose flour
100 gr of wholegrain spelt flour
50 gr of dark brown cane sugar
1 pinch of salt
1 teaspoon of bourbon vanilla powder
1 heaping tablespoon of cream of tartar
1 teaspoon of cornstarch (optional, I had to finish the package)
3 tablespoons of sunflower oil
50 ml of rice milk
3 tablespoons of orange marmalade
a handful of raisins
a spoonful of agave syrup (or malt or maple syrup) for the icing

I first mixed the dry ingredients, adding sifted cream of tartar at the end, and then liquid ones. I knead well for a few minutes, made a “ball” and put it in fridge for half an hour. I took the dough and, in the absence of the “beast”, who is at school, and would have never forgiven if I had used her molds, I made some pellets and flattened them with the bottom of a glass on the baking sheet, covered with baking paper. Then, I dissolved the agave syrup with a little water and I brushed the surface of each cookie. I baked them in the oven at 180°C for about 15 min; at the beginning they’re a bit soft, so you’ll need to let them cool well before removing from the baking sheet.

    Look delicious! I don’t like that much the taste of orange in cookies and cakes though :-(…but I can always try with these!
