Eleonora’s Lunchbox #1
Hi there! I haven’t been using my beloved Hello Kitty’s bento box for a while, God knows why. In the last few days I found the inspiration and I started using it again. For lunch I like to have raw food, as I feel full for longer and actually I’m trying to have as much raw food as possible. This evening I bought a lot of vegetables at the super and I tried to use as many as possible of them… every time I exit the super with my bag full of veggies I feel so happy and thankful to Mother Earth 🙂
As you see in the pics, my bento box has three compartments. Bigger one: salad with goji berries and (vegan) balsamic vinegar; smaller one: peas and cucumber; “less small” one: mushrooms and celeriac. Let’s have a closer look. Quantities are up to you, so I’ll not specify them.
Ingredients:
(salad with goji berries and balsamic vinegar)
celery
baby corn
fine beans
goji berries
balsamic vinegar
(peas and cucumber)
peas
cucumber
a sprinkle of harissa powder
(mushrooms and celeriac)
mushrooms
celeriac
finely minced fresh coriander
for all “compartments”: extra virgin olive oil (I haven’t used it, but you may wish), maybe mixed with a good cold pressed omega3-6 oil.
Method:
Reeeeeeeally difficult, definitely haute cuisine. Mix all the ingredients separately for each salad and place them in the compartments. That’s it!

They were sol delicious! The best one was peas+cucumber+harissa…it was so fresh 🙂 . Followed by mushrooms+celeriac+coriander, quite a peculiar taste, intriguing.
No, no more pictures… if I see the outside I MUST buy it! 😆
