Corncob Mexican Style
Years ago when I was in Mexico, I often used to eat the corncobs that they sell on the go, cooked and seasoned with salt, pepper, red pepper, mayonnaise and a sprinkling of grated cheese (I wasn’t vegan then) and they were very good … therefore, I have now decided to try and make them, veganizing the recipe!
Ingredients:
2 cobs
sea salt
pepper
chilli
nutritional yeast flakes
for the mayonnaise:
100 ml of soy milk
200 ml of vegetable oil
a pinch of salt
chive
pple cider vinegar
Method:
As you might guess, this recipe is extremely simple. Boil the cobs in water with some salt.
Meanwhile, prepare the mayonnaise: place the soy milk, oil, salt, chives in a tall container and begin to whisk with the hand blender moving it from the bottom to the top, to whip the mayonnaise. Meanwhile, pour a little apple cider vinegar (you can add more of itlater on, according to your taste).
Drain the corn and put them on a plate, sprinkle throughout their length with salt and pepper. Cover with mayonnaise and add pepper and nutritional yeast flakes!

I cook corncobs in microwave generally, they come out very well. This recipe is delicious!
