Rösti Tower
with roasted vegetables.
If you like potatoes then you can not love rösti! I haven’t been doing them for a while, and as this morning I bought some good potatoes I thought I’d get to work with something good …
Ingredients:
potatoes (I used one for each person)
salt
vegetables to taste (here pumpkin, carrot, zucchini and aubergines)
extra virgin olive oil, salt, pepper
Method:
First, I prepared the vegetables: I chopped everything in sticks and cooked them in the oven with olive oil, for about 25 minutes.
For the rösti, you must peel potatoes and grate them, from the photo it should be clear how to do it (they’re still raw!).
Then, pat dry them well and cook in a pan greased with oil; I wanted them to be disk-shaped, so I made them round… it is important to crush the potatoes well, so that they are all compact: while cooking, they will release the starch which will act as a glue and they won’t crack Cook them well so that a crust will form and the inside will be done as well (you don’t need much time if you make them thin)
Once the rösti is ready you can serve them….rösti, vegetables, rösti…and gnam!
