Jerusalem Artichokes Creamy Soup
Another creamy soup!? Yeah, Jerusalem artichokes deserved a version on their own!
This is really good and it is also useful to spoil oneself in these cold nights …
Ingredients:
(serves 2)
250 gr of Jerusalem artichokes
2 potatoes
½ leek (just white part, the most tender)
½ cup of soy cream (I use Provamel)
500 ml of water
1-2 teaspoons of veg stock
oil
Method:
Peel potatoes and Jerusalem artichokes and cut them into small pieces.
Meanwhile, in a sauce pan prepare the broth with water and veg stock; in another pan, fry a little oil with the leek, finely chopped.
Add potatoes and Jerusalem artichokes to the leek (at this point, in the original recipe you have to add wine, but I didn’t have it) and pour the hot broth.
Let it simmer, covered with a lid, until potatoes and Jerusalem artichokes get soft; add or remove the broth as needed.
Purée with the hand blender, add soy cream and stir for 5 minutes. Season with salt if necessary.
Serve hot with some sesame seeds.

Good! I love Jerusalem artichokes! Not that easy to find though; and I’ve been told that they make you bloat 🙁
I didn’t notice any bloat! Anyway, even if you could have this kind of problem it’s worth tasting it because it’s very delicious!!!
Yes I know them very well, I had the several times in the past…but now I can’t remember if I had problems with the bloating 🙂
