Apple and Hazelnuts Cake


My first vegan apple cake 🙂

300 gr of cake flour
baking powder with cream of tartar
100 gr of cane sugar
100 gr of soy butter
200 ml of soy milk
2 apples
2 tablespoons of jam (in my case, organic strawberries)
70 gr of hazelnuts

Sift together flour and baking powder. Whip butter and sugar, add milk and, slowly, the mixture of flour and baking powder, mixing it all with an electric whisk.
Once you’ve got a soft dough, add 1+1/2 apple, previously chopped into cubes and combined with the jam.

Finally, add 1/3 of minced hazelnut.
Turn the oven to 180°C.
Pour the pastry in a cake tin (I lined it with baking paper, but you can also use butter or extra virgin olive oil)
Garnish with apple slices and whole hazelnuts and sprinkle with sugar.
Bake for 45 minutes (check with a toothpick, insert it in the centre of the cake, when it comes out dry the cake is done).
To my hubby loved it :-).
