Chocolate Cookies

Another sweet delicacy …

Ingredients:
150 gr of margarine
60 gr of sugar
2 tablespoons of potato starch
4 tablespoons of water
200 gr of flour
20 gr of cocoa
1/2 teaspoon of cinnamon
1 pinch of salt
½ dl of cream (soy, for instance)
100 gr of dark chocolate
1 tablespoon of icing sugar

Method:
Mix all ingredients together and let the pastry stand in fridge overnight (I left it 6 hours). Roll it out to a thicnkess of about 3 mm and cut it with cookie molds.
Bake in preheated oven at 180°C for about 8-10 minutes.
Prepare the filling: boil 1/2 dl of soy cream and add 100 gr of dark chocolate amalgamating them very well. Add 1 tablespoon of icing sugar and stir well.
Once everything has melted, let the filling cool.
Join the two cookies with filling as prepared and soak part of them or decorate as desired.
