Meliga’s Pastries
Hi everyone! I introduce myself with this easy easy recipe …
I found these cookies recently, impressed by their color and by the fact that they are made of corn..but the list of ingredients did never allow me to buy them, so I wanted to try and “veganize” them … I do not know whether they’re similar to the “original” but I find them very tasty 🙂
Ingredients:
(makes 10 cookies)
100 gr of home made margarine (for margarine, I used peanut oil)
50 gr of sugar
150 gr of corn flour
3 drops of lemon essential oil
Method:
Mix margarine with sugar and essential oil, add the corn flour and knead to obtain a firm pastry that does not crumble easily.
I wanted to use the cookie maker, but unfortunately there was no way to get a single cookie, so I let the pastry exit from the cookie maker, well pressed (a perfect cylinder!), and I sliced it to a thickness of half a centimeter or so.
I baked the cookies at 160°C until golden brown.
These cookies should be kept separated by to 3/4 cm as they tend to expand a lot during cooking; also they will be crumbly just baked, but they will harden once cooled.
