Pasta with Spinach& Smoked Tofu

I find that the earthy flavor of spinaches goes very well with smoked tofu and the pasty sweetness of pine nuts¬† …

So here’s a pasta dish full of flavour.

smoked tofu
pine nuts
pasta (also wholegrain)
1 shallot
extra virgin olive oil

Place 2 cups of water in a large saucepan, with a sliced shallot and spinaches, well washed: cover and cook. In the meantime boil the pasta.
When spinaches are ready (do not overcook) drain, chop and place them in a bowl, add salt and smoked tofu, mashed with a potato masher. Drain the pasta and add it to spinaches, along with pine nuts, e.v. olive oil, gomasio and pepper, then mix well.
A final sprinkle of smoked tofu and it’s ready to be served!
