The hedgehog
… which my grandma Rosita used to do for me when I was a kid.
Ingredients:
500 gr of chestnuts
2 bay leaves
1 teaspoon of salt
1 tablespoon of sugar
1 tablespoon of unsweetened cocoa powder
1 knob of butter soy
1 tablespoon of rum (optional)
2/3 tablespoons of vegan milk
a hint of vanilla
pine nuts
raisins
Method:
Boil the chestnuts in a pressure cooker with salt and bay for about an hour, from the whistle. Let them cool in water (otherwise they will dry out too much) and peel them
very well. At this point your fingers are pretty brown-ish:-P
Mash the chestnuts with a fork or a potato masher (do not use the blender!) and mix them with sugar, cocoa, vanilla, rum, soy butter and veg milk, until dough is firm and malleable.
Form the hedgehog’s body and make the eyes with raisins and the spikes with pine nuts.
Let it cool in the fridge for a few hours before enjoying it.
